1 lb of our Pre-seasoned chipotle cheddar ground brisket (available on the website)
Hollow out 6 Zucchini’s (cut insides into chunks to use inside zucchini)
8 oz organic corn kernels (pre-cooked)
1 cup cooked quinoa
1 cup cooked black beans
Cook chipotle cheddar ground beef, then add zucchini chunks, corn, beans, quinoa.
Spoon mixture into zucchini boats. Bake for 30 minutes at 325
Top with pico de gallo, sour cream, and avocado
